Francisco José Pérez Elortondo is professor of Food Quality and Safety and coordinator of the official Master in innovative enology at the University of the Basque Country (UPV/EHU).

Between 1987 and 1997 was formerly the Technical Director of the PDO Idiazabal cheese. Initially, research works were related to the microbiological and sensory properties in cheese. He has been the Director of the Sensory Laboratory of the UPV/EHU (LASEHU) since their origin in 2000. LASEHU is a laboratory specialized in the research and development of specific methods for the sensory quality evaluation of foods and beverages with official quality brands, using expert trained panels. The Laboratory was accredited by the Spanish Accreditation Body (ENAC) in 2005 and since 2008 is the first and only accredited Laboratory in Spain in wine sensory quality evaluation. Over the last years, it has contributed to the growth of sensory science in Spain, including sensory analysis as a scientific discipline in studies at the University, collaborating with the Spanish Normalization Body (AENOR) and ENAC or promoting the Professional Sensory Association in Spain (AEPAS). In September 2010 was co-chair of the Fourth European Conference on Sensory and Consumer A Sense of Quality in Vitoria-Gasteiz. Today is Vice-president of AEPAS and Board member of the European Sensory Science Society (E3S).
