The Research Center opened its doors in 2008, with the purpose of training young researchers and exploring the many scientific challenges pertaining to the areas of expertise of the Institut. At the interface between university and industry, the research projects are conducted from a pluridisciplinary perspective, focusing on the study of choices, usages, and perceptions in order to investigate the link between man and food in the contexts of culinary arts, hospitality and foodservice.
With the PhD Workshop, the research center intends to create a unique opportunity for scientific exchanges for PhD students of both the Institut Paul Bocuse and other universities, without any distinction of discipline. The aims of this workshop are twofold. Firstly, it is a methodological workshop, which will combine presentations and discussions on the topic of ethics in food research (interventions from experienced researchers, presentations and discussion of PhD works and scientific exchanges). Secondly, the workshop provides a training opportunity on the process of scientific publishing. In addition to tutorials on scientific article writing and reviewing during the workshop, participants will also experience the complete publishing process with the publication of the proceedings, during which they will have both the roles of author and reviewer.

Food Research: Methodological and Ethical Issues
Food behaviors and nutrition researchers are frequently facing sensitive data, either when studying vulnerable or sensitive populations (eg. children, elderly, disabled…), or when targeting confidential or personal topics (such as religion, health, or social status) or when using observational or physiological data. The way such data is handled is at the heart of the ethics of research. Which attitude should be adopted in delicate situations? How should the research project be presented to the studied subjects? What level of involvement should the researcher have in the observed phenomenon? What are the precautions to take when communicating the results of such research?
Some scientific disciplines use a standardized framework and methodologies to address these issues (eg. through randomized controlled trials, double-blind trials). Others have established guidelines about the position of the researcher facing these questions.
These ethical issues are a part of conducting research and building projects, which may be reviewed by an ethics committee prior to their launching.
This two-day workshop will provide the opportunity to present research works and to discuss and exchange about the scientific approaches developed in varied disciplinary fields to address these questions of sensitive data and ethical issues. The objective is to exchange in a multidisciplinary perspective and to progress together on the methodological and ethical stakes in food research. The workshop will also offer a platform for scientific writing and reviewing exercises and is directed at PhD students and Junior Researchers open to exchange in the context of their research.
Call for papers
Proposals
PhD students or junior researchers who wish to take part to the workshop should send a one-page proposal for a communication, along with a CV and an abstract of their ongoing research (PhD project or Post-doctoral research).
Papers
Selected participants will present their work during the workshop and commit to delivering a completed version of their paper (4000 to 7000 words) before the workshop. The expected structure of the paper is the following: introduction (context, research motivation, literature review and objectives); methodology; results; discussion and conclusion. Each participant will receive an electronic copy of the papers which will be discussed within each session, and will be assigned one paper to review before the workshop and two papers to discuss as chairman during the sessions. The papers will be revised on the basis of the reviews and the comments received during the workshop, and will be considered for publication online in the proceedings of the Workshop.
Sessions
The aim of the sessions are for the researchers to introduce their paper and to put it in perspective with the topic of the workshop. Talks, given in English with a PowerPoint support, will summarize the main steps of the research by putting emphasis on the empirical and methodological dimensions of the study. Each participant will have 20 minutes of oral presentation, followed by 10 minutes of discussion.
